I’ve been in a bit of a funk this week. I didn’t check in with you guys on Monday because, honestly, I didn’t really have much to say. My weekend was super uneventful, thanks to my least favorite thing in the world: snow.
We didn’t just get a little snow. No, we got about a foot of snow, which is a LOT for this area. It was all lovely on Saturday, gently falling through the day. By Saturday evening I was ready for it to be gone! I know I know, I am a total grouch when it comes to winter weather. My skin is pale and dry, I can’t sit outside on my back deck, it’s just the worst. To my northern friends, I don’t know how you do it! The upside is that Riley didn’t have to go in to work, so we spent a lot of time together over the weekend. Relaxing. And relaxing some more. And a million more hours of relaxing. I nearly went insane.
I shoveled snow like crazy just so I could do something physical because I was so bored. Monday we just about went stir crazy and dug ourselves out so we could go to lunch and a movie. Riley even went to Target with me, so I know he was as bored as I was!
Even though work was closed Monday and yesterday, I still went in to work yesterday because we have a million admission decision letters to mail out and snow delays mean nothing to teenagers awaiting their decision. Almost all of the office staff came in, so we got a lot done! I guess the silver lining is that living in Southeastern VA means the weather will change constantly, so we’re supposed to have temps in the 50s-60s over the next few days. Fingers crossed I won’t see an ounce of snow left by the weekend!
One thing I did a lot of over the snowy weekend was eat! Chef Riley was home with me, so we enjoyed a lot of good meals. I figured I’d share my meals from Monday for What I Ate Wednesday. Enjoy!
Ok, not a Chef Riley creation. Sadly, I didn’t get a good photo of the potato pancakes he made on Sunday. Instead, Monday I had a bowl of TJs cereal with PB on top and almond milk.
After wandering around forever trying to find a restaurant that was open, we ended up at Center St. Grill for lunch. I ordered their crab cake sandwich with fries.
Riley outdid himself with a delicious homemade red sauce and homemade meatballs on top of spaghetti. The only thing that would’ve made it better was homemade pasta! Reminds me, anyone have a recommendation for a pasta maker?
In addition to the dinner, I also had a glass of wine and some tea before bed.
