Hey there! Hope your week is going well so far. Mine is a bit crazy over here. Most of the schools are on spring break this week, which means our campus has been flooded with people! We’re averaging 500-600 people a day, so luckily the weather has been phenomenal.
After a long admission cycle and events season, it seems like spring break week is the last busy week of the year. Problem is, it comes right at the end when we’re all completely pooped. Remember my goal to “drink less coffee” on Monday? Lol I’m hilarious because there’s no way I’m making it through the week without it.
As stressful as high school spring break week can be, it’s also a lot of fun talking to families who are visiting campus for the first time. Many of them are taking their first-ever college tours, so it’s fun to be part of that with them.
I’m at least keeping to my fitness goals so far. I woke up at o’dark thirty on Monday to get in my running time at the gym. They labeled the parking lot and I thought this space was appropriate for those of us stupid enough to be up at 5 AM.
I hit snooze too many times to do more than run a few miles before I had to get ready for work, but it was definitely worth it.
Now that I’m officially over my oatmeal phase, I wanted something different for breakfast.
I sauteed some portabellos and leeks on the stove before stirring in some eggs and feta cheese. On the side I had whole grain toast with 1/2 and avocado smashed on top. It was good! It was nice and hearty, too, so it kept me full for hours. I want avocado toast to be my next breakfast obsession, but avocado is so inconsistent! It’s either hard as a rock or mushy. I always miss that point when it’s juuuust right.
Once I got to work I enjoyed a big cup of coffee while I did my weekly reports.
My morning was super busy with guests. We had a few hundred people show up for the morning tour, so I was busy until about 1:00, when it was time for lunch.
Lunch was some leftover shrimp and veggie stir fry with cauliflower rice. It was ok, but not a whole lot of food, so I had a tasty macrobar on the side.
The folks over at Gomacro sent me a sample box of their bars to review and I’ve been having at least one a day. I gotta say, I’m pretty impressed! I’ll share more about them with you guys on Friday, but the cashew butter one I ate on Monday was super satisfying.
After a busy afternoon and sweaty drive home (my car AC is not working at the moment. It’s been fun.) I came home and poured myself a glass of wine.
Riley had to work late, so I was on my own for dinner.
I took two portabello caps and topped them with tomatoes, basil, and Italian cheese and made little mini caprese pizzas in the oven. It was delicious and totally satisfied my portabello cravings.
Now it’s back to day #3 of this crazy week. Wish me luck!
