Wow, Monday came really fast! This weekend flew by and I feel like I’m still catching up. Did you have a good weekend? Hopefully you were able to relax and have some fun. One of the best parts for my was getting rid of all the snow we got a week and a half ago. After all the arctic temps around here, we had a good thaw and some rain came in to get rid of most of it. Good riddance, I say.
I left work early on Friday to get my house in order since I was working on Saturday. Friday night involved teaching my singing lesson, then catching up on some shows and cracking open a bottle of wine (they’re paying me in wine).
Saturday morning, I headed into work to present to some prospective students, then headed over to have lunch with my co-worker and good friend, Yoma. After we ate, we headed out to Kim’s baby shower, which was our second one of the week for her.
Sunday morning started on a slow note, with me lounging in bed for a couple hours. Riley brought me the Sunday paper and a cup of coffee and I perused grocery sales and worked on planning our menu for the week.
I planned out all our dinners last week and they were all healthy, fresh, and delicious. It’s also nice to have Chef Riley making some healthy items (not that his pizza isn’t still my favorite). We’re not following any kind of set diet plan, but just making more of an effort to cook from scratch, eat more salads, and rely less on takeout. Last week, Riley made a soup with Swiss chard, white beans, mushrooms, and all kinds of other healthy veggies. It was awesome. In an effort to not waste any of the piles of veggies and fruits in our house, I’m being much more intentional with our dinner plans, so I hope to share them with you each week.
Here’s what’s on tap for this week:
Sunday: Broccoli cheddar bake, similar to Amy’s frozen version. I loosely followed this version from Skinnytaste and it turned out great, despite my many swaps. I added baked chicken for Riley and Beyond Chicken strips for me.
Monday: Salmon with roasted asparagus and rice
Tuesday: Spaghetti with meatballs (turkey for Riley, veggie for me), arugula salad
Wednesday: Soup and salad
Friday: Homemade pizza night
Saturday: Maybe date night out? I’m leaving this one up in the air for now
Breakfasts will be avocado toast on ezekiel bread, smoothies, or eggs. Lunches will be leftovers or salads.
