Hey there, long time no see! I missed you guys on Monday, but to be honest I didn’t have a lot to report. After working on Saturday and running off to our home inspection, I didn’t have much left in the gas tank. I spent what was left of my weekend napping, dreaming about afternoons on this swing at the new house…
Entertaining two very bored cats…
And binge-watching Elementary from my couch.
I’m nearing the end of my busy season at work, but we’ve still got another hectic month to go and I’m feeling it. Throw in buying a house at the same time and I am wiped. out. I feel like I just need a day to get my hair cut, get my nails done, get a massage, and maybe drink like 8 mimosas. Is that too much to ask for?? Oh man, just typing that out makes me really want it….
Anyway, I got my shit together after Sunday and have had a pretty productive week so far. I’m actually sticking to my weekly workout plan so far! Here’s what I wrote out in my planner on Monday:
- Monday- barre class
- Tuesday- hot yoga
- Wednesday- 5K run at the gym and some ab work
- Thursday- rest?
- Friday- HIIT run at the gym
- Saturday- rest
- Sunday- barre class
I’m halfway through and sticking to it, which is pretty rare for me. I’ll put that one in the “win” column for the week.
In the food department, I’d like to say I’m eating super duper healthy, but that would only be partially true. I did snap some pics of my meals from Sunday for What I Ate Wednesday today, so enjoy!
I got hit with a huge sweet potato craving several days ago and I’m still craving them. For my brunch on Sunday, I roasted one sweet potato (olive oil, salt, pepper), and had two scrambled eggs with cheese to go with it.
More sweet potatoes! For dinner, Riley made some awesome cheeseburgers and homemade fries. He made regular fries for himself and sweet potato for me.
Sweet potatoes are an awesome source of vitamin A, vitamin C, manganese, B6, biotin….all kinds of good stuff! It’s also a good source of fiber and has a lower glycemic index than regular potatoes, if you keep track of that sort of thing. I’m probably the only one who finds that interesting, but in case you wanted a lesson in sweet potato nutrition, there you go.
I’ve got a busy day today at work, but I’m helping with the campus career fair, which means free lunch. I’ll catch you guys on Friday!
