Hey friends, long time no talk! I missed you guys on Monday. I don’t really have much of an excuse except for the fact that reading season is here and is in full force.
I’m buried in essays and recommendation letters! How was everyone’s weekend, though? Hopefully you all had a great time. Mine involved a birthday dinner for my friend, Tara on Friday night.
Plus a trip to Richmond on Saturday to see JaneBerry.
Other than that, things were pretty low-key and I did a lot of errands and relaxing. I also ate really well on Sunday, so I thought I’d give you guys a peek for What I Ate Wednesday!
Scrambled eggs, grapefruit, toast with jam, and coffee. As soon as winter comes around, I get on a grapefruit kick. I hope it lasts because I bought a whole bag of the darn things.
After breakfast I did some Christmas shopping and bought some candy on impulse in the checkout line. I never buy candy, but I can’t resist Necco wafers.
I realize it’s possibly THE lamest candy to get excited about, but I love it. I should keep a roll in my purse at all times for emergencies.
I grabbed a “harvest” salad of some kind from Trader Joe’s while I was out and about. I’m sure it has a name, but I ripped the lid off as soon as I got home. It had butternut squash, cranberries, nuts, quinoa, and some other stuff. It was really good and I followed it up with a chocolate-covered pretzel stick, also from TJs.
Pre-dinner, Riley and I sipped on some rum and cider by the fire. Rum and cider is one of the best things for cold weather!
Then we had some turkey, stuffing, and mixed veggies for dinner.
This turkey, you guys….It was seriously the best! I occasionally receive products from Jennie O to try out and back in November they sent me their Oven Ready Cajun Style turkey. You literally take the turkey out of the freezer, poke a couple holes in the bag, and pop the whole thing in the oven for 4 hours. No thawing, no basting, no jabbing a meat thermometer in every 30 minutes. It’s idiot-proof, which is perfect for people like me.
We basically decided there was no point to making a turkey any other way from now on. The seasoning gave it a good kick and it was incredibly juicy.
Dinner was followed up with another glass of wine before I called it a night, so that’s what I ate!
