We’ve made it! Oh man, you guys, I can’t even tell you how happy I am to see Friday. Not only is it this last day of these crazy spring break tours, but I have a whole two days off. Yesssss! My weekend plans are still a little up in the air with Easter and all, but I do plan on spending the day shopping with my cousin tomorrow, so that should be fun.
As is tradition over here, I wanted to share some of my favorite things from this past week with you all to kick off our weekends. Enjoy and share some of your favorites in the comments section!

One of our student workers is a super talented artist and I asked her to do a painting of Bella. Well, she nailed it and she captured Bella so well! I surprised Riley with the painting over the weekend and he loves it. I know the cats are super jealous that they’re not in the picture, but I figure if they make it to 15 years old maybe they’ll get one too.
The folks over at Gomacro sent me a sample box of their bars last week and I’ve been eating one every day since they arrived. I feel like I’m always on the hunt for snacks that are convenient and tasty, but aren’t processed and full of junk. Basically, I just wish I could take all the delicious homemade bar recipes I see and package them. Luckily, I think I’ve found something close to that!
I admit I generally assume that I don’t always associate the word “convenience” with healthy/organic/vegan/non-processed foods. Gomacro has managed to do both, which is pretty awesome for someone like me (aka lazy).
The ingredient lists have things like organic almond butter, organic dates, organic cranberries, organic oats….you get the idea. Basically, everything in the bars is good for you and provides natural, sustainable energy. I’m sure these bars can’t take all the credit, but I’ve thrown at least one into my work bag this week and they’ve helped get me through these crazy days. I pretty much never eat anything in bar form for breakfast, since it’s a guarantee that I’ll be starving an hour later. Several days this week, though, I’ve paired a bar with an apple and it’s sustained me until lunch!
My favorite bars so far (ones I will definitely buy in the store!) are the chocolate chip + peanut butter, and the cherries and berries one. You can actually see peanuts and chocolate chips in the bars, which I love. I also had a banana + almond butter one that was really tasty.
A couple notes you should be aware of- these are suuuuper chewy. I happen to like it that way since it’s gives a more “stick to your ribs” kind of taste, but if that’s not your thing you should be aware that pretty much all of them are dense and chewy. Second thing is that they taste way better than they look. Not trying to diss their appearance, but when you first open one it definitely has a “health food” look that makes you assume it will taste like cardboard. That couldn’t be more true! You actually taste every ingredient in these, probably because the ingredient list is short and everything in it constitutes “real” food.

So I’m a bad blogger. I only took one picture of our date night dinner. We also failed you because we ate a chain restaurant. Normally, Riley and I try and support our local restaurants as much as possible. I am a sucker for a good deal, though, so somehow we ended up at Carrabba’s on Tuesday. It was so good! They had 3 small plates for $12 and awesome happy hour deals like 1/2 price all apps and drink specials.
I especially enjoyed the stuffed mushrooms. I’ve been on a huge portabello kick this week! I also loooove their bread basket and the yummy infused oil they serve with it.
Campus is in full bloom and it’s just so freaking gorgeous. I wish I could hire our campus landscaping crew to come do my yard for me because they are incredible. After I move, of course, because apparently I’m a crazy person for planting anything 2 months before moving.

I’m ending this post with two articles I saw online this week that made me happy.
This made me laugh so far! The second one I loved was this adorable, very good dog whose mom accidentally ordered a way too small dog bed.
The dog was still super grateful for his little bed, proving that dogs are the absolute greatest and that we most definitely do not deserve them.
