What a fun and relaxing weekend! I did a LOT of necessary bumming around after a super busy work week, but I did some fun stuff too.
The real fun started on Friday with our annual office chili cookoff. I started this little shindig 7 years ago and it’s turned into a really fun way for our office to celebrate the holidays, stuff our faces, and hang out before we all leave for break. I think I eat more on Chili Cookoff Day than I do on Christmas, to be honest!
The food this year was on point. There were 6 difference chili entries and all of them were delicious.
We also had side dishes of buffalo chicken dip, cheese and crackers, salad (I skipped the salad…), chili toppings, and a million desserts. I saved room after all the eating for some of the chocolate dessert and cake batter fudge. They were both amazing.
A co-worker asked if my dessert plate would be going on the blog and I said, “of course it is!” To which he replied, “Kelly Runs For THIS.” Damn right.
I was especially proud of my entry. I made Mexican Chicken Chili, mainly following this recipe. I went all out with the toppings, making little cups so people could “dress” their chili with cilantro, Mexican fresco cheese, avocado, and lime wedges.
It was a huge hit with everyone and, after all the votes were tallied, I was announced as the winner! I was super pumped, especially since there were so many good chilis this year.
After the Great Feast, we participated in our white elephant gift exchange.
I came home with a nice bottle of cabernet, so basically the whole day was a success.
Saturday and Sunday were pretty low-key for the most part. I did a little Christmas and grocery shopping, and cleaned the house from top to bottom. I also did a lot of napping!
Sunday evening I put on some real clothes and headed over to my friend Tara’s house for a ladies Christmas celebration.
We had an absolute blast! I only knew two people going in, but the other women were so fun and interesting, so I really enjoyed getting to know them.
We’ve already started tentatively planning our next girls night!
Today marks the last full day of work until January 4th. We close at noon tomorrow and then I’m FREE! Can’t wait to get this vacation started.
