Happy Wednesday! I hope your week is going well so far. Today is going to be a great for two reasons: 1) the couch officially arrives….hopefully…and 2) my mom is coming down to take me to an early b-day lunch. It will be a nice and very welcome break in my week.
Let’s talk Valentine’s Day, shall we? How much chocolate did you eat? Fess up, it can’t be worse than Halloween. I had a pretty good day of meals myself. Luckily for you all, I took pictures of all of it for What I Ate Wednesday. Enjoy!
After running 4.5 miles at the gym, I was super hungry for breakfast. As part of my meal prep on Sunday (technically it was the only meal prep I did, but whatever), I made some baked egg muffins to heat up for breakfast. I had some toast and green juice on the side. The green juice was homemade- I threw in kale, celery, carrots, cucumber, and lemon juice.
Later at work, a co-worker brought me some chocolates, so I ate them all in one fell swoop.
There were 3, but I ate one before I remembered to take a picture.
Lunch was a bit of a disaster. My co-worker Kim and I decided to go out to eat for lunch to a locally owned restaurant in town. I ordered their sweet corn and crab soup, which was actually pretty delicious.
I also ordered a salad to go with the soup, but they brought out my soup first. No big deal until the salad came out and Kim still hadn’t been served.
After some back and forth, Kim’s scallops came out first under-cooked, then over-cooked. At this point we’d been at the restaurant well over an hour and needed to leave. The upside is that both our meals ended up being free. The downside is I’ll never go there again.
Since Riley and I are going out on Friday, we decided to keep things low-key for dinner last night. When I got home, Riley had cleaned the house (including the litter box- true love right there), bought champagne, and had even started an instagram account for me. It was amazing to just kick my feet up and relax while he got dinner ready.
Thanks to Trader Joe’s, we had beef tenderloin with a horseradish cream sauce (horseradish and sour cream stirred together, basically), roasted potatoes and asparagus, salad, wine, and chocolate cake.
I fell asleep before I could get to the chocolate cake.
I was so full after all that food, but it was definitely worth it! I was so relaxed and ready for bed after all that. While I’m pumped for our date night out on Friday, last night’s dinner was perfect for a mid-week Valentine’s Day.
