Hey there, lovely readers! How’s your week going? I’m so glad I took the time over the weekend to chill out because this week has been so busy! I’ve been working my tush off all week, but luckily the time is flying by as a result. I’m warily watching the weekend forecast, though. It’s currently calling for snow and I am not pleased.
That shit better change over to rain by Saturday or we’re gonna have problems.
Anyway, let’s chat about food, shall we? I rarely record weekend meals for What I Ate Wednesday, so I snapped some pictures from my Sunday meals to change things up a bit. Enjoy!
I made a pretty awesome breakfast casserole Sunday morning. Jennie O turkey sent me some turkey breakfast sausage, so I was feeling inspired. If you’re looking for a recipe, my turkey sausage breakfast casserole recipe is really similar to what I made Sunday. I did something different, though, and used the honey butter crescent dough as a base since it was all I had. I was worried about how it would turn out, but it was awesome. Almost like having maple syrup on bacon. I don’t know if I’ll ever go back.
I made a pitcher of iced blueberry green tea (by Yogi) and sipped on it throughout the day.
Well, breakfast was more like brunch for me, so I didn’t really eat a real lunch. Plus, I was busy napping during lunch time, so my “lunch” consisted of macarons….
And some BBQ Pringles, but I did not take a picture of those.
Dinner was much better on the nutrition front! I made some veggie bow-tie pasta and topped it with shrimp sauteed in butter, olive oil, and lemon juice. In the saucy mixture I also tossed some grape tomatoes, spinach, herbs, red pepper flakes, and parmesan cheese.
It was actually pretty damn tasty! I was bummed that Riley wasn’t around to witness me actually make up a meal from scratch without a recipe. At least there is visual evidence.
I rounded out my evening with some prosecco, which has apparently become my new favorite beverage.
