Happy Valentine’s Day! Whether you’re celebrating today with your significant other, your girlfriends, your family, or your co-workers, today’s a great day to show the ones you love some….well, love. Valentine’s Day has always been one of my favorite holidays. I’ve written about my love for Riley several times here on the blog (My favorites are Here and here). It’s crazy to think we’ve been together for nearly 12 years now.
We’re going out for my birthday on Saturday, so tonight we’re planning a romantic dinner at home. I’m looking forward to sipping some champagne with my favorite person and just pausing to enjoy some quality time with him.
Quality time with anyone has been in short supply these days, thanks to my work schedule. Working 6 days a week nonstop will do that to you! While I never want to wish away parts of my life, if I woke up tomorrow and it was magically May? Well, let’s just say that wouldn’t suck. I did manage to capture a whole day of meals on Monday for WIAW, just in case you’re feeling nosey and want to know what I’m eating these days. With the exception of a couple items, most of what I had was vegan (and I didn’t even plan it that way), so cheers to Meatless Monday. Here’s what I had!
Post-workout protein shake (vanilla almond butter, almond milk, and vanilla protein powder) and some avocado toast with everything bagel seasoning on top.
At work, I had some coffee and a croissant from the campus coffee shop. I eat carbs when I’m stressed.
Lunch was leftovers from the other night. In a pan I threw in some mushrooms, sliced peppers, and edamame and sauteed them. Then I threw in a bag of TJ’s frozen cauliflower rice stir fry. Then I chopped up and added a package of TJ’s teriyaki-marinated tofu and some green onions. I sprinkled some hemp seeds on top, a bit of soy sauce and sriracha, and called it a day. It was really good and it’s made for great leftovers to take to work.
After lunch I had some more coffee.
I almost never drink coffee after noon, but I was draaggggging. Everyone in my office is on the verge of falling asleep at their desk right now. It just is what it is!
After work, I dug into some pita chips and tomato basil hummus before teaching a singing lesson at home.
Dinner was sauteed green beans, roasted baby potatoes, and “chicken.” I tried the Trader Joe’s Chickenless Crispy Tenders and they were amazing. I’ve been working my way through various faux meats to see what I like and these top the list. I can always tell the difference between real and fake meat (anyone who tells you they taste the same has forgotten what the real stuff tastes like), but the difference with these was almost non-existent. I want to put them on a sandwich, in my salads, pretty much on everything. Good job, TJs.
I had two glasses of wine before heading upstairs to read before bed.
