Happy Monday! This weekend was really short for me, but that just comes with the territory these days. I was at work late on Friday for a scholarship dinner that didn’t let out until 8:30.
I rarely see campus at night anymore, but when I do I’m always reminded of how lucky I am to work where I do, even when the days run long.
Saturday morning I was back at work early for another event. After work I stopped by to pick my rings up from being cleaned and dipped in rhodium. They looked brand new!
I also made a pit stop at Target for body wash. I forgot to buy the body wash because I got sucked in by the major clearance deals happening in the cosmetics section. I got stuff for up upwards of 75% off!
By the time I got home it was after 3 and I felt like my whole weekend was slipping away and I was very crabby. After power cleaning the house I laid down for a bit to press the reset button and get out of my cranky mood. I ended up passing out for 2 hours haha. I felt much better after that.
The rest of Saturday involved catching up on shows, having dinner with Riley and just relaxing.
Sunday morning was nice and lazy. I lounged in bed pretty much the whole morning! Riley made me breakfast, I planned our meals, and did some reading.
The rest of Sunday was pretty uneventful. I did some grocery shopping, did my nails, that sort of thing. I try not to do too much when I only have one day off because then Monday really sucks!
Weekly meal plan
The consensus was that you guys like seeing my weekly meal plans, so here’s what I’m planning for this week.
Sunday: arugula salads with beets, walnuts, baked goat cheese medallions and a balsamic dressing
Monday: these Greek pita tacos. I’ll use ground turkey for Riley and faux beef crumbles for me
Tuesday: French onion soup (TJs frozen section) and salads
Wednesday: fish tacos (recipe here)
Thursday: leftover night
Friday: pita pizzas and side salads
Saturday: dinner out!
