Happy Wednesday! This week is rolling right along, which is good because it’ll be a long one for me. I’m trying not to think about the fact that I’m working Friday night and Saturday. It’s just that time of year for me. I keep telling myself it’ll be summer before I know it, right?
I’m popping in real fast today to share my meals from Monday for a little What I Ate Wednesday action. Here’s what I ate on Monday!
I bought a package of the Benevolent Bacon, Egg, and Cheddar breakfast sandwiches from Sweet Earth. The “bacon” is vegan and it’s pretty good! I wish there were more than 2 in a package because I’m still craving them.
On my way to work I sipped a hazelnut iced coffee.
I had a simple salad that I threw together that morning: arugula, cucumber, tomatoes, onion, feta cheese, garbanzo beans, and pine nuts. I had a tahini dressing in that smaller container that I tossed it with just after taking this picture.
I didn’t take a picture, but I had some baby carrots and a little spicy hummus while working at my desk.
Dinner was a small salad that Riley put together with balsamic vinaigrette on top, plus a pasta dish I made last week and couldn’t wait to make again. I cooked some red lentil pasta (from TJs), tossed it with a jar of pesto, stirred in some roasted cherry tomatoes (toss with EVOO, salt, pepper, and garlic, then roast at 350 degrees for 15 minutes). I finished it off with some parmesan and dinner was ready in 25 minutes!
I had a second glass of wine after dinner was over and that was my day!
