Happy Monday! I meant to post on Friday, but things at work have been crazy so I got pushed way down the priority list. Luckily, after a super busy week, I was able to recharge and get my life together over the weekend.
You guys, it was amazing outside all weekend! It felt like one of those early spring weekends where the whole world comes out of hibernation. Of course, I’m sure we have more cold spells ahead of us, but for now I’ll take it.
When I got home from work on Friday, Riley had bought me some beautiful flowers!
We had homemade pizza for dinner and I turned in early, totally pooped from the week.
Saturday was do-all-the-chores day. My house was a mess! I tackled 3 loads of laundry and deep cleaned every inch of my house (I’m talking magic eraser to the scuffs on the stairwell clean). Anyone else go crazy with the cleaning when things get stressful? I always feel so much better afterwards.
In between cleaning I also bought some new sneakers! I’ve been loving ASICS lately so I hit up the outlet for a new pair and took Bella out for a walk to test them out.
I went for a quick run in them as well, but the wind was insane so I made it ooooohhh about a mile haha.
Saturday night was date night. Riley and I hadn’t had a proper date in a couple weeks so we headed out for dinner. Apparently the entire world had the same idea as us because after super long waits at our first two choices, we ended up at Hound’s Tale an hour after we’d left our house. Not that we were complaining because that place is awesome!
I ordered their roasted chickpea cakes and they were awesome.
Sunday morning was nice and lazy. Riley made me breakfast and delivered it with coffee and the paper to me in bed. You can’t beat that! Captain even joined me for a snuggle.
He hurt his paw somehow and has been limping all over the house. He also hasn’t wanted to play outside and I feel so bad for the little guy. He won’t let me mess with his paw, so I’m hoping it feels better soon and we don’t have to call the vet.
After lounging around for a couple hours, I rallied and went out to do some grocery shopping for the week, took a long walk through the historic area, and washed my car. Then I spent the rest of the afternoon/evening reading and pretending it wasn’t almost Monday. I like to milk every last minute of the weekend, so instead of doing meal prep I was sipping wine and taking a bubble bath.
Meal plan for the week
Here’s what I’ve planned out for our meals this wee:
Sunday: clear out the fridge night, aka leftovers (ask me how my dinner of potato chips and slices of cheese was).
Monday: red lentil pasta with pesto and roasted cherry tomatoes. Probably small salads on the side.
Tuesday: burger night. Beef for Riley and Beyond Burger for me.
Wednesday: weekday date night. It’s restaurant week in Williamsburg so we’re going to find out who has all the good deals.
Thursday: salad and fettuccini Alfredo (the frozen stuff from Trader Joe’s).
Friday: I’m working an event that goes through dinner. The veggie option is a spinach, mushroom, and goat cheese turnover.
Saturday: pizza and salad? I dunno, I’m playing Saturday be ear
Breakfasts for me will be avocado toast, fruit and oatmeal, or eggs and toast. Lunches will be leftovers, salads, and one lunch out with a co-worker (restaurant week again).
