As much as I love time off from work, this was the WORST possible timing. East coast blizzard of 2018 has been the worst. I’m pretty sure they named the storm and I can’t think of the name right now, but I’ll just call it total bull-**** for the time being. Can you tell I hate winter?
We went back to work last Wednesday, but pretty much knew the rest of the week would be closed, so we worked as fast as we could to get admission decisions made. Nothing like cramming a week’s worth of work into one day!
Once the snow rolled in, Riley and I were basically trapped, so naturally we made mimosas and vegged out.
Bella’s the only one who actually likes snow. In her younger days, she’d literally run sprints in the snow because she’d get so excited. Due to her old age or the “arctic blast” temperatures, she hasn’t quite been interested in the same way this time around. She’s going stir crazy like the rest of us, though.
Saturday I finally ventured out and went to the gym, along with everyone else, who apparently had the same idea. It felt amazing to run! I’d worked out in our living room, but it’s not really the same.
Later on Saturday, I booked our plane tickets for May to Barcelona! I’m super excited about our upcoming anniversary trip. If you have advice or ideas for Spain, I’m all ears! We went out to our favorite tapas spot for a quick dinner to celebrate before spending the rest of the evening in our PJs.
Sunday, I napped a lot, took care of some errands, and just got ready for the work week. I actually planned our dinners for the week too! Considering that basically never happens, I’m pretty proud of myself.
I was also really happy with the dinner I made last night so I wanted to share it with you guys if you’re looking for something super simple and quick to throw together. First I made a salad of arugula, pine nuts, and shaved parmesan cheese and made a simple lemon/olive oil vinaigrette. Then I roasted some cherry tomatoes (and baked some chicken for Riley) and tossed it with a jar of pesto and red lentil pasta from Trader Joe’s. The whole thing came together in 30 minutes.
Riley raved about it and I’ve got leftovers for most of the work week, so it was definitely a winner.
Now here’s hoping the arctic temps are done for the year! I’m looking forward to watching all this snow melt and counting down the days until spring. Hope you guys have a great Monday!
