Wow, that weekend went by way too quickly! I hope you all had a fun and restful couple of days off. My weekend was super short, but I’ll back up to Friday to share a bit about my day.
Friday was our yearly chili cook-off in the office and the food did not disappoint!
I planned on bringing chili, but I could not get it together in time to put in that much effort, so I brought cucumber and egg salad sandwiches instead. They were a big hit! I got complaints that I didn’t bring enough of the cucumber sandwiches, so that may be my contribution from now on.
For anyone who’s wondering, I salted English cucumber slices overnight and then patted them dry. Then I spread some whipped cream cheese on each slice of bread, zested some lemon on top, and layered the cucumber slices. Super easy, but everyone really liked them.
The rest of the staff brought in some amazing options as well and we all dug in and stuffed our faces. For dessert I had cake batter fudge, a yearly favorite.
The people who made chili brought their A game this year! There was some stiff competition. We all did a white elephant gift exchange afterwards before returning to our offices to work.
Then, two hours later on Friday afternoon, I stopped by the alumni house for another staff party on campus.
Friday evening I taught my last singing lesson of the semester, then met Riley and some of his co-workers out for a quick drink.
We brought a pizza back home with us and dug in while watching a movie, then I headed to bed to rest up for Saturday.
Saturday was……nuts. I told you on Friday how we were going to interview 100 students in one day, right? Well, we got it done, but it was busy the entire time. I brought my juicer in and we made some fresh juice to get things going before the day got started.
We were all exhausted by the time it was over! I headed home and dove headfirst into a bubble bath, which was heavenly.
Sunday was kind a day to do whatever I felt like doing. I lounged in bed for awhile, sipping coffee and cuddling Coco.
I also dug out the waffle maker and made some whole-wheat waffles with bananas on top for breakfast.
The rest of my day was pretty simple- Target run, the gym, napping for like 2 hours, reading my book, etc. With only one day off, I didn’t pressure myself to do too much!
I can’t complain about it being Monday now because we’re only here today and tomorrow before closing for the holidays. Woo hoo! I’m pumped for break, but in the meantime there’s lots to do, so I’d better get to it.
