Happy Wednesday, friends! This week is flying by for me. Things at work are super busy, so it makes the days go by in a blur. That just means we’re one step closer to the weekend, though!
I thought I’d pop in to share what’s been on my plate lately. I used to do a “What I Ate Wednesday” post every week, but I got a bit tired of it. I like to do it every now and then, though, because I love it when other bloggers share a whole day of meals. I always get really good ideas from it so hopefully you enjoy reading them as well.
Now before I start, the last time we talked about food a lot I told you how I was doing cutting back on meat. For the most part, I’ve kept meat out of my diet since the summer. After last week, though, I’m slowly bringing some of it back. You may have noticed from my Thanksgiving pictures that there was definitely turkey on my plate. What had started as a strong intention to “cut back” had somehow turned into “cut out completely” and I found myself constantly thinking about food. Suddenly all I could think about was what I “could” and “couldn’t” eat. If you’ve followed my blog for awhile, you know I do not diet. I’m a firm believer in not restricting myself or obsessing over food. Been there, done that. Somehow, though, it felt like I was on a diet I never planned on being on. I needed to reign in my competitive nature and relax the “rules” a bit. Now I’m back to a place I’m happy with- mostly meatless. I still believe in the positives of cutting back on animal-based foods, but If Riley gets a yummy looking dish that has meat when we’re out to dinner, I’ll try some. I ate turkey at Thanksgiving. Most of my breakfasts and lunches are meatless anyway, but I’m relaxing a bit more with my dinners.
So that’s where things are at this point. I’d love to hear your thoughts if you’ve ever tried to cut back on meat (or carbs, sugar, alcohol, whatever) and how it’s worked for you. With that said, here’s what went down yesterday! Of course, I said all that and everything I had yesterday was meatless, but whatever. Here it is…
Avocado toast with everything seasoning on top, along with a glass of orange beet juice from Trader Joe’s. I’m in love with that stuff! Once I got to work, I made a cup of tea.
I grabbed a handful of pita chips while I worked on some applications. To say I’m obsessed with pita chips would be an understatement. I really shouldn’t have them in my office because I can clear a whole bag in 24 hours.
I had a bagged salad from Aldi. It had shredded kale, cabbage, and carrots with pine nuts, cranberries, and an Asian dressing. I tossed some nutritional yeast on it to add a little extra flavor. It was good, but it’s better as a side salad unless you jazz it up a bit more.
Surprise, surprise. More pita chips! I had them with some red pepper hummus this time. So good.
Wine with ice cubes, cause I’m classy like that.
I used this recipe as my inspiration and improvised a bit based on what I had. Basically it was penne, roasted broccoli, spinach, arugula, parmesan, garlic, lemon juice + zest, and butter. It was so good! I added a whole lot of extra garlic to bump up the flavor and it was definitely worth it.
What’s the best thing you ate yesterday?
Are you better at going cold turkey or with moderation? I’m definitely better at moderation. I know some people who can’t keep certain foods in the house or the temptation to eat it all will be too much. I hate feeling like I have restrictions, though, so I’d much rather have a little bit of something I want and move on.
