Hey there! I kind of disappeared on you guys last week, sorry about that. I just needed a break and needed to take something off my “to-do” list, so blogging was put on the backburner. I may be a bit sporadic over the next few weeks as well, but we’ll see how it goes. Work is getting crazy and pretty much everyone in my office is super stressed. Thanksgiving break is just around the corner, though, so relief is almost here!
My week last week, despite being busy with work, was a good one. Halloween was super chill at our house. We had way more trick-or-treaters than our old neighborhood. Since Bella hates the doorbell, I spent the evening out on our front porch with the cats and Riley came in and out to see all the kids throughout the evening.
Coco hung out for a bit, then got scared by the kids and left. Like pretty much every other kid out there, I ate too much junk food. Hot cider + pizza + candy = me sick to my stomach by 9 PM. I took some Tums and passed out early, completely disappointed in my lack of ability to hang.
The rest of the week was more work stuff. There was an alumni homecoming reception for university employees who graduated from the school, so that was fun. A little champagne mid-week is always a nice break!
There was also an impromptu date night for tapas with Riley on Friday.
Saturday involved work in the morning, then I got to spend the afternoon with Megan, who was in the area for homecoming with her husband. Since I missed Megan’s baby shower a couple weeks ago, I was pumped to spend some quality time with her. We walked around campus to check out the homecoming festivities before heading to lunch.
After lunch, we treated ourselves to mani/pedis. I sooooo needed that! Those massage chairs are gold and I want one in my house.
Saturday evening was spent vegging out and reading, catching up on shows, and hanging out on my swing. Wild and crazy night.
Sunday morning was cool, overcast, and quiet. I popped over to Colonial Williamsburg to see all the pretty fall colors before they got busy. I intended to go for a run, but I just wasn’t feeling it, so instead I took a nice long walk and listened to Sam Smith’s new album.
His new album is really good! I haven’t listened to the whole thing, but it’s perfect for sipping on something hot and watching the leaves fall.
The rest of Sunday involved grocery shopping, then doing a little meal prep for the week. I took this….
And turned it into this:
I can’t wait to eat this throughout the week! I got a lot of inspiration from Pinterest and put together a large quinoa salad with black beans, edamame, corn, jalapeno, red onion, chopped pistachios, roasted sweet potatoes and butternut squash. I tossed it all with a dressing of olive oil, cilantro, lime juice, and honey.
