Hello friends, and happy Monday! I hope you all had a fun and relaxing weekend. I had half of a weekend, which is pretty much a regular thing this time of year. I had to miss my best friend’s baby shower on Saturday because of a work event and I was super bummed. I know it comes with the territory and I do love my job, but I was a bit of a grouch going into the weekend. Knowing it was my 7th straight day working and I had to miss something like that put me in a crummy mood.
Luckily, I don’t tend to stay in a crummy mood for long. I got home from work on Saturday and crashed pretty hard. Like, for two hours hard. It felt amazing and I know I needed the rest! I didn’t do much else on Saturday except run out to get some pizza, salad, and wine for dinner.
Basically I ate my feelings and went to bed super early. It’s fine.
Since I went to bed so early, I was up bright and early on Sunday morning and took Bella out for a nice walk. It’s finally looking and feeling like fall around here, so it was nice to enjoy the crisp, cool weather.
Once Riley was up, we got ready and headed out for breakfast at Food For Thought. This place is crazy popular so there’s usually a wait. Their food is amazing and they literally have something for every diet out there. Rather than wait 40 minutes for a table, we opted to sit at the bar instead. We started out with their fresh juice, which had beets, carrots, and apples.
For my meal, I chose their tofu breakfast scramble. It was delicious and it was made even better when I found a bottle of sriracha 😉
After breakfast, Riley and I did some grocery shopping and I hit up Target. Later in the afternoon, I took Bella over to college creek to sit by the water and do some reading. I even bought one of those nice little backseat covers for your car, which Bella promptly ignored.

The beach was perfect! It was so nice outside and we laid down under a big tree for a little while to relax and get some fresh air.
Sunday evening was spent prepping for the week ahead! I almost never do this, so I was very proud of myself. I made a big thing of green juice to start…
Then I made some lunch bowls for the week: garlicy kale, farro, roasted sweet potatoes and chickpeas, hemp seeds, and tahini dressing. I also pulsed pine nuts, nutritional yeast, salt, and garlic in the food processor and sprinkled that on top.
Considering I ate lunch out literally every day last week, this was a huge improvement. Riley and I rounded out our evening with some burgers and grilled potato wedges.
Now I’m ready for the week! I’m finally done with travel season, so I get to stay in one place for a while. There’s also a cold front coming in this week, so we should see some more chilly temps. I’m not complaining one bit!
