Well hello there, friends. How’s it going? I had no weekend recap to share with you because…well, I didn’t really have a weekend. Not that I’m complaining. This time next month I’ll be in Paris, so a few more Saturday events until the finish line is not the end of the world.
Speaking of Saturday events, we had our first Admitted Freshman Day on Saturday and it went so well. It’s my favorite event of the year and I made sure to annoy the crap out of everyone with my pep and enthusiasm.
On Sunday, I basically had just enough time to buy groceries and clean the house before it was Monday again.
My assistant has been out of town since Thursday and it’s been rough without her (come back to meeeee!). She comes back today, so all will be right in the world again. In the meantime, at least the days have flown by since I literally have no time to take a break before the phone rings again.
On the food front, I’ve got some pretty good meals lined up for the week. I started out my day on Monday with oatmeal. I’m nearing the end of my oatmeal kick. Where I was once obsessed with tasting all the oatmeal cup flavors, I’m now starting to hate the sight of it. Might be time for a break.
For lunch I had a Panera veggie sandwich and green goddess salad.
And a super tasty pasta dish for dinner.
Dinner was so good you guys! I tossed some whole wheat spaghetti with a small jar of pesto while I roasted some cherry tomatoes, portabello slices, and red onion (salt, pepper, EVOO for 25 minutes at 400 degrees). To the pasta, I added sauteed roasted garlic chicken sausage, then the roasted veggies, then sprinkled some basil and shaved parmesan cheese on the whole thing. It was pretty incredible and came together in about 30 minutes.
Side note- while I was in Trader Joe’s on Sunday, buying ALL the things (don’t ever go to TJs hungry), I grabbed a random package of radishes and now I don’t know what to do with them. Any ideas, other than just slicing them and tossing them on a salad?
This week has me all scatter-brained, so I apologize for not offering more substance. Ever have weeks where you feel like you’re just trying to “get through” them? I try not to view my days like that, but sometimes it just happens. Hopefully I’ll get my lazy butt to the gym as we get later into the week because I’ve been hitting snooze like it’s my job so far. Wish me luck!
