Wow, this week is flying by! I can’t believe it’s Wednesday already, and I figure the weekend will be here before we know it. How’s everyone doing this week? So far so good over here, except for the part where I had to go get a cavity filled at the dentist yesterday. Is there anything more annoying than the dentist? Nothing against mine, he’s a nice guy and all, but I’ve had the sensation of a cotton ball up in my gums ever since yesterday afternoon.
Well, Wednesday is when we talk about food around here. For What I Ate Wednesday I’ll be sharing my meals from yesterday. Let’s take a look at what I’ve been eating!
I’ve been eating these a lot. They’ve been super handy during busy mornings when I don’t really have time to cook anything at home, which this time of year seems to be all the time. I found a version at Trader Joe’s of these and I’m really excited to try them because the ingredient list is a lot cleaner and simpler. I’ll let you know how they go. Also with breakfast was a cup of hot tea followed by a 2nd cup of hot tea.
Later on in the morning, I had a couple handful of these pumpkin seeds while I worked.
Lunch was eaten kind of on the run. I left work, got my oil changed, and made it home just in time to change clothes and scarf something down super fast before heading to the dentist’s office. Our favorite standby in the house when neither one of us wants to cook anything is Trader Joe’s orange chicken and veggie fried rice. I doused my leftovers with some sriracha and called it a day.
I also munched on these little cheese bites from Trader Joe’s that I picked up on it when after the dentist. They taste like cheese straws but in bite form.
Pre-dinner, I enjoyed a glass of wine and Riley brought me some cheese and crackers as a little appetizer while he got dinner put together. The wine bottle made it look awesome, but it was just ok.
Dinner was… Oh crap, did I really eat almost nothing but Trader Joe’s yesterday? Nothing like putting it all on paper (er, screen) to make you realize how much I depend on that place. Anyway I picked up some chicken marsala with mashed potatoes and carrots for dinner.
Riley roasted the carrots in salt and pepper, fresh thyme, and Parmesan cheese. They were the highlight of the meal! The entrée however, was a tad smaller than we expected. The box said that it served 2 people, but when it came out of the oven and we noticed that there was only one chicken breast and a small amount of mashed potatoes. We just decided to go with it and it actually ended up being plenty for both of us. Looks a tad sparse on my gigantic plates, But with the carrots and the appetizer it ended up being fine. Makes me think maybe we over-estimate how much food we really need at dinner time!
I ended my day with some hot tea and reading in bed, then it was lights out.
