Good morning and happy Wednesday! Luckily for me, it only feels like Tuesday since I started the work week a day late. How does it feel to be back to normal? I actually love that I’m back into a normal routine, plus it feels good to feel useful again!
I know part of starting the new year for most people means making resolutions to eat healthier, whatever that means for you. For some that means going on a specific diet, going vegetarian, or maybe it just means you’re resolving to eat a little bit cleaner. I try not to let the holidays derail my normal eating too much. I know that’s not always doable, but I find that I start the new year on a much better foot if my pants aren’t feeling too tight.
Since today is What I Ate Wednesday I wanted to take you through a day on one of my days off over the break last week. I worked out quite a bit over the break and tried not to let holiday treats take over too much of my day (Though I still enjoyed plenty of treats, don’t worry). So here’s what went down!
I’m still definitely on my grapefruit kick these days, so I enjoyed some of that along with two hard-boiled eggs and some peanut butter toast. To drink I had a cup of tea.
We didn’t have much in the way of lunch foods and our house last week so after my workout I made a quick smoothie instead. I used some protein powder, almond milk, and a blend of frozen fruit and veggies. Dole makes a frozen combo of different fruits and also things like spinach, which makes for a much healthier smoothie. It wasn’t super filling, but I was on the go all day so I didn’t really notice.
I snacked on some nuts halfway through the afternoon, but forgot to take a picture.
I love how much of a life saver Trader Joe’s is. I know you all know how obsessed I am and even though I had ample time to cook, let’s be real. If I don’t have to make it from scratch I’m basically never going to. For dinner we had Trader Joe’s frozen coq au vin with mashed potatoes and a side of cheesy broccoli. It was super delicious and took no time at all to put together. Also on the side was a glass of wine followed by another one a little while later. And another one later on. Hey, it was the holidays, I had to get my indulgence in somewhere!
