I’ve been Christmas obsessed this week! Between the Grand Illuminations celebration on Sunday to the various Spotify Christmas playlists, I’m all in. Yesterday was just another yearly tradition that I love and helped keep the spirit going.
Every year, my office hosts a holiday celebration at the Jefferson Hotel in Richmond, VA. We host a luncheon for high school counselors, then later that night we have a dessert reception for high school students and their parents. At the same time, the Alumni office hosts a party for area alumni, so we basically took over half the hotel for the day! It’s one of my favorite traditions because the Jefferson does Christmas like no one else.
Literally every nook and cranny is decorated beautifully and we loved wandering the hotel on our breaks to see it all. Since today’s What I Ate Wednesday, I thought I’d take you through my day to see what we were eating.
I kept things pretty simple. I haven’t had much in the way of breakfast food lately, but some PB toast, OJ, and a handful of nuts did the trick.
For our counselor luncheon we had salad, chicken breast with some kind of cranberry sauce with mashed potatoes and asparagus, and red velvet cake for dessert. I was good and kept the dessert to a few bites, but I basically cleaned my plate with the rest of it.
The best part of the luncheon was getting to meet a local counselor who’s a regular reader (Hey Robyn!). It just made the whole afternoon even better.
For the rest of the afternoon, we had a conference room set up where we all worked on our laptops, catching up on application reading. We had coffee and tea service all day, so I probably downed three cups of coffee.
Haha yeah…I feel like I did this to you guys last week with the cheese plate situation. Well, I did it again because I was too lazy/cheap to leave the hotel for dinner or pay for something at their restaurants on site. Most of us working the admission events crashed the alumni party next door for apps- things like crab puffs, spanakopita, and chicken fingers. After our dessert reception, I chowed down on some of the cheese and crackers left over while we waited for the last guests to leave.
I was definitely a little hungry when I crawled into bed at 11:30, but by that point all I wanted was sleep!
