This week is flying by! We’re halfway through the work week already and so far, so good. I’m attending a conference here in town over the next couple days, so today’s my last day actually in the office for the week. I have a lot to get done between now and the end of the day!
For What I Ate Wednesday, I normally share a day of meals on a typical week day with you. I thought I’d switch it up a bit and share a weekend day with you guys instead. I know, I’m wild and unpredictable. Here’s what I ate on Sunday!
I had a few minutes in the kitchen, so I put together a simple frittata with mushrooms, green onions, and feta cheese. On the side I had some super nutty multigrain toast with butter and jam on top. I normally pick more nutritious toast toppings, but it just sounded too good!
I attended a hot vinyasa yoga class, then took a long walk with the dog, so I was feeling really healthy and proud of myself. Afterwards, I decided to take it a step further and break out the juicer. I had a bunch of celery, carrots, and kale that were in danger of going bad if I didn’t use them, so I juiced them all up with some lemon juice. It looked gross, but tasted delicious.
Sunday was apparently the day to use up all the leftover food! I had some mini croissants leftover from Thanksgiving morning and some ham from the same day, so I made a little sandwich to go with some chips. I know it doesn’t look mini on that plate, but all I had left were salad plates. I’m a huge sucker for Utz sour cream and onion ruffles. When I was a kid (and adult, now that I think about it), every time I went to visit my grandparents we’d have sandwiches with those same chips. I think I got addicted to them at a young age, so now I can’t resist!
I’m also loving Target brand’s cucumber mint sparkling water.
Yes, that is a plate of cheese and crackers……See, what started as a little appetizer to go with my glass of wine turned into me getting a second helping with a second glass of wine. By that point I wasn’t hungry for a real meal, sooooo….Trader Joe’s cheese aisle for the win? I’d like to say I don’t do that sort of thing often, but I’d be lying to you. P.S. I highly recommend their cranberry goat cheese.
