Halfway through the work week already! It’s been a fun-filled week over here for me. Last night, my cousin and I went to the MY2K tour to see 98 Degrees, O-Town, Dream, and Ryan Cabrera. My inner tween came out and I missed the days of platform Steven Madden flip flops, low-rise flare jeans, and frosted lipstick. I’ll share more later, or if you’re following me on Snapchat (kelly.scallion), maybe you’ve already witnessed some of the fun!
Today’s all about food, though, so I’m sharing my meals from Monday for What I Ate Wednesday. Just a little reminder that this is just one day of my meals and that I don’t necessarily eat like this every day, nor do I presume to know what kind of foods would work for you.
I had a giant slice of an egg white bake that I prepped on Sunday. In the bake was chicken sausage, spinach, and feta cheese. On the side was a honeycrisp apple.
Sorry, I ate half before I remembered to take a picture. Also on Sunday, I made a batch of Amanda’s healthy almond butter and jelly muffins. I used honey roasted PB instead and had to make a couple other substitutions based on what I had, but they turned out great and have been nice to throw in my bag on the way to work.
More meal prep to the rescue! In my tupperware was a grilled chicken patty, sauteed zucchini and portabellos, and riced cauliflower with a healthy sprinkling of sriracha on top of it all.
While waiting for Riley to get home, I poured myself a glass of wine and caught up with the pets. Their day was about the same as usual. Naps, eating, staring out the window….
Here’s where things got good! Riley was getting recognized at a quarterly dinner for his work, so we got to enjoy one of our favorite French restaurants, Le Yaca. We got there at the tail end of cocktail hour, then settled into our seats for wine and bread (my two favorite things).
First up were the salads.
Then, I had their seared scallops and risotto for my entree.
I quite literally cleaned my plate with that one! For dessert, I ordered the creme brulee.
It was amazing, but super rich. I got about three bites in before calling it quits, but luckily it was free so I didn’t have to feel guilty.
It was great to enjoy a delicious dinner and watch Riley get recognized in front of his co-workers. So proud of him! Plus, I am now the proud owner of a Tiffany’s crystal mug that commemorated the event. Didn’t even know Tiffany’s made mugs, did you? I will now only drink out of that from here on out.
