I think I’ve figured out the food prep deal. For me, anyway. After trying my hand at it last week, I gave it another go on Sunday. Last year I went a bit overboard on a food prep day and ended up tossing a bunch of food because I never got around to eating it. I also spent way too much time in the kitchen. Armed with that knowledge, I went into Sunday knowing that my food prep had to be 1) just breakfast + lunch for work week days and 2) I had to do it all in under an hour. Luckily, I managed to do it in around 45 minutes of actual kitchen time. Since it’s What I Ate Wednesday around here, I thought I’d show you how it went based on my meals from Monday. Enjoy!
The egg bake is basically the same one I made last week. I followed this recipe for the most part, except I used all liquid eggs whites, mainly because it was just easier than cracking eggs. On the side I had some sliced bananas and strawberries.
Mid-morning, I dug into a Kind breakfast bar.
I also sipped on the latest La Croix flavor, blackberry cucumber.
I pre-made four of these little containers to last me most of the week. On the left is sauteed riced cauliflower from TJs. Next is some sauteed chopped zucchini, red peppers, red onion, and spinach. Finally, I had a grilled chicken patty to go with it all. The chicken patties were another TJ find. Pre-cooked and seasoned, so I basically just opened the package and plopped one into the tupperware. Easy peasy!
It was probably not quite enough food for me, so I need to bring an extra snack for the rest of the week, but overall it was tasty, easy, and healthy.
I was pretty hungry when I got home from work and Riley had just put dinner in the oven. While I waited, I grabbed a couple handfuls of veggie chips.
I also had a glass of wine.
Then, dinner was finally ready. We had a chicken + broccoli alfredo bake that was pretty tasty.

Do you prefer to eat larger meals or eat lots of snacks throughout the day? I prefer to have big meals and then not have to worry about food for a few hours.
