Is that a weekend I see in the distance?! We’re halfway there, friends! This week is flying by, which I love. It’ll be Saturday before we know it!
Today’s Wednesday, so I’m keeping with my tradition of celebrating What I Ate Wednesday and sharing an entire day’s worth of food. Today, I’m sharing my meals from Monday. I realized this whole food prep thing might have something to it. Enjoy!
Breakfast was already cooked thanks to my preparation on Sunday, so I heated up two slices of an egg white and kale bake and ate it with a flourless banana muffin with some PB on top.
Breakfast kept me full pretty much all morning, which was good because I was basically tied up in meetings and interviews until lunch.
I also prepped my lunches on Sunday and was a huge fan of my creation!
I was inspired by some Pinterest recipes, but didn’t actually follow a set one for this. In a giant bowl I threw together:
- Red quinoa (I cooked 1 cup of dry quinoa ahead of time)
- 1/2 pint cherry tomatoes, sliced in half
- 4 ounces of feta cheese, cubed
- 1 can of chickpeas
- 2 mini orange and red bell peppers
- 1/4 cup chopped red onion
- Sliced green onion (I didn’t measure)
- 2 small cans of tuna in water
- 1 packet of Starkist Mediterranean flavored tuna
- Juice from 1 lemon
- Olive oil, drizzled
Voila! The whole thing only took 15 minutes, which is how long the quinoa took to cook. I portioned it out into lunch containers, so I just had to grab one in the morning and throw it in my bag.
After getting home, it was absolutely perfect outside so I laced up my sneakers for a quick 2.5 mile run. I nearly ate a bug after it flew into my mouth, but luckily it didn’t get that far. I’m sure I’m not the only one who’s done this.
Question for my runner friends who run after work. How do you manage to keep your ankles and calves from hurting? I feel like after running around in heels at work all day, a post-work run feels like torture! I stretched and everything, but my calves and achilles felt so tight the entire time. I never experience this if I run first thing in the morning, so any advice would be great.
By the time I finished my run, showered, did dishes/laundry and such, I didn’t feel like cooking much so I grabbed my trusty orange chicken and veggie fried rice from TJs for dinner. I had a bag of frozen stir fry vegetables that I threw into the mixture to bump up the nutrition a bit.
I treated myself to one post-dinner glass of wine, but then I was in bed by 9 PM.
