Monday was weirdly good. You’d think it would’ve been depressing after two weeks of vacation, but I found myself enjoying the return to structure and routine. When my alarm for the gym went off at 4:30 AM, I didn’t even hit snooze. Someone please tell me what’s wrong with me!
Anyway, despite the craziness of the day, I managed to document all my meals for WIAW. The What I Ate Wednesday link-up is always a fun way to spy on other blogger’s meals and get new ideas. Keep in mind that this is just ONE day of meals. It’s not always indicative of regular eating for me, it just happens to be what I ate on one specific day.
Pre-gym, I drank a glass of lemon water while waiting for my car to warm up.
After a good run and kettlebell workout, I showered and dug into breakfast. I’ve been weirdly obsessed with the latest combo, as you can probably tell if you stopped in for last week’s WIAW. I topped a piece of rye toast with PB, sliced and salted a hard-boiled egg, and paired it with 1/2 a grapefruit. On the side was a big mug of black coffee, because apparently I drink my coffee black now.
I never used to drink black coffee, but in recent weeks it’s just tasted so good to me. I’m hardcore now, obviously.
I had a Chobani flip with PB and a sparkling water about mid-morning.
I noticed a bunch of fun Flip flavors and picked up a ton for work snacks. The PB one is pretty freakin’ tasty, so it’s my current favorite.
Lunch was a frozen Amy’s entree- Mexican casserole bowl. It has little pieces of polenta in it that are really good.
When I got home from work, Chef Riley was in the middle of making shepherds pie. It was good comfort food considering a huge cold front came through this week.
After dinner I drank a huge mug of tea, but forgot to snap a picture. You can probably figure out what a cup of tea looks like….
And that’s what I ate! I could definitely have used some more veggies, but there were a couple servings hidden in my lunch and dinner.
