Happy Wednesday! Since I don’t have a Saturday event this weekend I can say that we’re halfway through the work week and actually mean it! I started off the week feeling pretty crummy. The stress of work started to get to me and I coming home early on Monday, taking some Zicam, and passing out for the rest of the afternoon. I slept for hours, then got up, had dinner, and by 9:00 I was already nodding off again. That’s usually a sign that my body is just over it and I need to hit the reset button.
For me, hitting the reset button means going back to the basics. No eating out, drinking lots of water, and packing a healthy lunch to work. Since I’ve sworn off eating out this week, I made sure to have plenty of snacks on hand (thanks, Riley!) and lots of water while I’m at work. Here’s a peek at what I ate yesterday!
Two hard-boiled eggs and some avocado toast. I get the sprouted daily bread from Trader Joe’s and it’s so good! I also love putting everything seasoning on top of my toast.
At work, I had a La Croix and a handful of peanuts while I worked. JUST a handful! I have to keep the peanuts far enough out reach that I can’t just compulsively go for them every time I want something salty. Which is all the time.
I through together a salad in the morning to bring with me. Have you guys seen this stuff at Trader Joe’s before?
Well, it’s amazing for making salads that you have to dress ahead of time. I tossed that with some tomatoes, cucumber, red pepper, pine nuts, and feta cheese before drizzling some olive oil and balsamic vinegar over the top. The crunchiness of the salad base held up all morning and everything was still crunchy at lunch time. I also enjoyed a mini babybel cheese to finish off my meal.
I was lazy with my meal planning this week, so Trader Joe’s is doing most of the heavy lifting for me.
I made a small salad and heated up TJ’s spelt risotto. It looks disgusting, but it tasted really good!
I rounded out the night with a glass of wine and some chocolate covered toffee bites before turning in early.
