Hey there, friends, what’s happening? Not much over here, in fact things are pretty quiet. I’ve just been working, exercising, eating…the usual. Ha! How’s that for an exciting intro? Aren’t you guys just thrilled to hear more about my life right now?
Luckily for me, today’s What I Ate Wednesday, so I can at least share my meals with you. This is what I had on Monday!
Cereal again…I wanted eggs, but when I went to start it I realized we were all out, so PB puffs it was! I had a giant coffee, then poured a second one to go.
I can’t even call this trail mix because a couple weeks ago I picked out all the chocolate chunks and ate them. Then I started picking out all the cashews. So really, all I had were almonds.
Mooooes! I love burrito bowls from Moe’s. I piled on extra chicken, mushrooms, peppers, onions, salsa, jalapenos, cucumber, and a ton of other stuff. I got too full to finish it, but I gave it my best effort.
Chef Riley is back! He’s been a bit busy this summer with work and I’ve tried to pick up the cooking stuff more, but nothing really compares to his meals. He made us steak, broccoli, and incredible scalloped potatoes. I don’t have a recipe for the potatoes since, according to Riley, he learned what to do from “Some southern lady on Youtube.” All I know is they were amazing.
I’m very picky about eating steak and I carve it up so there’s zero fat in my bites. This means I’m left with extra little bites all over my plate when I’m finished. Well, Bella lives for those bites. Riley made sure she got to participate in steak night by throwing out the pieces for her to track down in the yard.
It’s exercise and intellectual stimulation, of which Bella could use both.

And that was my day! Unlike last week, I didn’t tally up any of the nutritional information for you, but I had broccoli, which makes the whole day officially a healthy one.
